The warning on tomatoes finally has been lifted and people will soon be consuming tomatoes in droves as they have missed that sweet salty freshness that dresses salads and many scrumptious dishes. Maybe you have been one of the lucky few that have local growers and Farmer’s Markets on Saturday mornings and have been able to enjoy ripe fresh tomatoes through everyone’s sadness.

Well, I have one scrumptious dish that will definitely get everyone’s tummy rumbling for fresh, sweet tomatoes. Basil, a crisp vinaigrette, tomatoes, and yummy mozzarella are the simple ingredients to this refreshing appetizer - wait, appetizer? Heck, why not create this as a unique twist on a salad for a wonderful opening to any meal this summer.

OK… my mouth is starting to water with thoughts of all of the bold, delicate flavors mixing.

Tomato Basil and Mozzarella Fresca Appetizer with Basil Vinaigrette

Dish:

1 Tomato

1 Mozzarella Fresca chunk

Basil leaves

Vinaigrette:

3 T. Extra Virgin Olive Oil

1 1/2 T. Balsamic Vinegar

Juice of 1 lemon

More Basil, about 1 Tablespoon, minced

Salt

Instructions:

Slice the Tomato into several slices. Thinly and gently slice the mozzarella. Give a little salt to both.

Make the vinaigrette by whisking together the olive oil, vinegar, lemon juice, minced basil, and add just a pinch of salt to season it up.

Plate the tomato as pictured, alternating tomato, cheese and laying a basil leaf on top. Drizzle with vinaigrette and serve immediately.
